Summary: Today Tony travels to south east Asia. He has always been fascinated by the notion of "natural fusion," the way cuisines and cultures blend over the centuries. He's particularly fascinated by Malaysia, where Chinese influence has mixed with Malay, Indian, Nyonya and indigenous Borneo culture.
